Interesting object for later in the year

If you are looking for an interesting and (exotic) target for your students with your setup how about the microquasar SS433 (the lawn sprinkler)

It shows several broad emission lines from jets, Doppler shifted by varying amounts as it spins. Here is a project sheet from Leicester University UK

and an example spectrum I measured using a Star Analyser prototype grating back in 2004 but never got round to repeating to see the variation in the line positions.
